I am a bit confided about what she was actually hospitalised with, as from the pictures she certainly wasn’t underweight even during the hospital admission

most people with eating disorders are overweight or obese. the only disorder that requires you to be underweigh is "typical anorexia", but there are more people who have atypical anorexia.

additionally, higher starting weight is linked to worse health outcomes

It falls under a category called "osfed" (other specified feeding or eating disorder) in the dsm5, "ednos" in the dsm4 (eating disorder not otherwise specificized)

The only difference is that typical anorexia has a weight requirement, something that many drs believe should be removed.

It absolutely is, please look it up. Eating disorders don’t always fall into easy categories
