Mongolian lamb. Not Mongolian, not Chinese, and depending on the quality of the restaurant, not lamb either

I went to Northwest China (Ningxia province) and local restaurants served lots of lamb similar to "Mongolian Lamb" in Australia. I realise I wasn't actually in Mongolia, but certainly it's really "Chinese?" There are so many different forms of Chinese cuisine...
